Healthy Recipes from Pinterest


I love Pinterest, not only for the cool photographs, but also for all of the delicious recipes I find.  Some are healthier than others and I wanted to share a couple of those with you.  Staying healthy and looking good have always been important to me.  Sometimes people say, “You’re lucky because you have good genes, that’s why you stay slender”.  No…because I work at it.  I exercise regularly and eat healthy (most of the time).  I treat myself also, which is very important!  Anyway, I made this first recipe a couple of weeks ago for lunch.  It’s so light and refreshing…

Lime and Cilantro Crab Salad in Avocado halves

Ingredients:

  • 1/2 cup lump crab meat
  • 1/2 tbsp light mayonnaise
  • 1 tbsp fresh cilantro, chopped
  • 2 tsp red onion, diced finely
  • Juice from 1/2 a lime
  • Sea salt and freshly cracked pepper, to taste
  • Dash of cumin
  • 1 avocado, cut in half, pit removed

Combine all of the ingredients together, spoon the crab mixture into each avocado half and enjoy!

Then…for an unbelievably yummy healthy snack or semi-dessert, try…

No-Bake Snack Balls (makes 18-20)

  • 1 cup of Oatmeal
  • 1/3 cup honey
  • 1/2 cup peanut butter (or other nut butter)
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla
Thoroughly mix everything in a medium bowl.  Let chill in the refrigerator for half an hour (sometimes I don’t wait for it to chill).  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

      • ohh yes! we do have that… I had tried to cultivate it in my vegetable garden but isn’t that simple. Anyhow, in the city, we have several oriental shops! thanks a lot for your precious explanation… 🙂 will do avocado for dinner I think I kow where a can buy crabmeat isn’t bio, but once in a while is OK if we eat fish (we are vegetarians).
        The kids will be hungry after 4 hous music training at the conservatory of music.

  1. Healthy recipes are the main subjects of my pinterest posts. I’m trying to experiment with stevia, coconut (for baking), hemp (for salads), or avocado (for stir-fry) oils, reducing added salt or high sodium condiments, using different flours and pastas, adding chia seed, ground flaxseed etc. Collecting the recipes is one thing, actually making them is the hard part!
